I'm on day twelve of Whole30. This is my second time doing the challenge, and this go-round has been much easier. I've identified some favorite American Made foods for Whole30 and I've found some recipes that I love including my recipe for a Whole30 Breakfast Cereal. My Whole30 Diet Experience
I'm not having strong cravings, and I'm not eating snacks (this doesn't fall within the Challenge guidelines unless you are having a snack pre- and post-workout). I found a grain free, gluten free, dairy free, sugar-free, Whole30, vegan, and paleo cereal recipe online, written by Ashton at Something Swanky. I used her recipe for inspiration to create a slightly different recipe, and one that I'm using every single day now. I promise you'll want to eat this cereal every morning! I've even made it as my dinner.
What I love about this “cereal” is that it's nutrient-dense, filling, and fulfilling. You'll stay satiated for three or four hours after eating it, and you won't suffer any sugar spikes from it.
Here's the recipe. It serves two.
Vegan Gluten Free Breakfast Cereal Recipe
Blend the following ingredients to make the base of your cereal. I use my Blendtec blender for this and it works like a charm, every time.
- 2 Tbsp. Bob's Red Mill Chia Seeds
- 3 Tbsp. Bob's Red Mill Unsweetened Shredded Coconut
- 15-20 almonds {or other nuts of choice}
- 1/4 can of full-fat coconut milk
Top with your favorite fruits and spices. Combinations could include:
- Apple, kiwi, raisins {photoed here}
- Apple, almond butter, 1 Bard Valley Medjool Date
- Apple, cinnamon, almond butter
- Apple, banana, clementine
- Apple, pomegranate seeds, kiwi
The list goes on, but top it how you like!

I love having a variety of breakfast recipes to use. If I don’t have variety I find myself skipping breakfast because I’m too bored of all my ideas, leaves me for a groggy day.

I need to look into the Whole30 diet. I’ve been doing the 8 Week Blood Sugar Diet, based on the eating plan followed by those who have had gastric bypass. It’s thought that the very reduced calorie diet (800 calories a day) they have to follow might be what reverses their diabetes, if they have it. The very restricted calorie count means you can only follow it for about 8 weeks, but if there is even a slim chance of reverses my diabetes, I’ll try it. (NOTE: Definitely only try it with a doctor’s OK!!! It’s not okay for some diabetics, especially those who have low blood sugar.) But I need a good, healthy diet for after the 8 weeks ends.
My daughter and I would love this WHOLE30 BREAKFAST CEREAL RECIPE. She will only eat Vegan and I am trying to eat more Vegan meals.
