I use Dave's Gourmet Butternut Squash Pasta Sauce as the foundation for Quick and Easy Butternut Squash Soup. Dave's Gourmet Butternut Squash Pasta Sauce contains tons of flavor on it's own as it's ingredients include red bell peppers, onions, celery and garlic- not to mention the butternut squash that is grown in Oregon! So this soup is fine on it's own, or additional ingredients can be added, based on your tastes. My personal favorite is an Indian inspired version. I saute some onions in coconut oil before adding the broth and Butternut Squash Pasta Sauce, and season with curry powder.
My kiddos devour the Quick and Easy Butternut Squash Soup when I add chopped granny smith apples. I simmer peeled and chopped Granny Smith apples in the soup until they are tender, and puree before serving. The apples add a sweetness that they love!
Quick and Easy Butternut Squash Soup
1 cup of chicken broth + another 1/2 cup to rinse out the jar with
1 jar of Dave's Gourmet Butternut Squash Pasta Sauce
Add 1 cup of chicken broth, and the contents of 1 jar of Dave's Gourmet Butternut Squash Pasta Sauce to a 2 quart pot. Add 1/2 of cup of chicken broth to empty jar, cover and shake to remove excess from jar. Pour into pot. Simmer. Add seasoning. Serve.
